This recipe for a delectable broccoli cheese and egg baked potato is one of the Southern daughter’s faves, and since I am still all misty and sentimental about the fact that she is now a bona-fide married woman I decided to cook this up for the Southern husband and me the other day.
Back in the old days, the two of them always hoped I would suddenly forget the broccoli part, but since I love broccoli (and it is a super-food), I made it the way I always have, and imagined her 10-year-old self at the supper table. Happy sigh…

This particular pose is called the PowerPoint (for obvious reasons) and while I am very used to seeing it at Clemson tailgate parties, I think it is pretty awesome when you are surrounded by your bridesmaids too.
It involves putting a “I am a fearless, powerful woman” expression on your face and pointing at the camera. In this case mainly with bouquets, although I have to say I am very partial to the awesome flower girl.
Here’s how you make a broccoli, cheese and egg baked potato!
Back at the potato, this makes a super quick, super delicious, nice and healthy lunch or supper.
Scrub up a potato and pop it in the microwave until it is nice and tender – this usually takes about 8 minutes or so in my microwave.
While the potato is cooking, steam up some broccoli florets and soft cook an egg. We love poached eggs with this one, and here is my foolproof method for poaching an egg, but a fried egg works fine too (and here’s a method for those too!).
Once you have all these pieces cooked and ready, split that potato open and fluff it a little.
Spread on some butter, top with that brocolli, sprinkle with cheddar cheese and pop it back in the microwave for a minute or so until the cheese is nice and melty.
Now pop the egg on top and cut into it so it melts into your potato.
And we all lived happily ever after!

Ingredients
- 1 Idaho potato, scrubbed
- 1/2 cup broccoli florets
- 1/4 cup shredded cheddar cheese
- 1 egg, either poached or fried (see note)
- 1 tablespoon butter
- salt and pepper
Instructions
- Prick the potato several times with fork and microwave until cooked through, about 8 minutes on full power.
- Steam broccoli, or microwave for 3-5 minutes with a little water until crisp-tender.
- Poach or fry one egg.
- Split potato open and fluff insides with fork. Spread butter over top and season with salt and pepper. Arrange broccoli over top of potato and scatter cheese over broccoli. Microwave for 1 minute until cheese is just melting.
- Place egg on top and break yolk so it spreads over all. Grind pepper over top and serve immediately.
