Why we love this recipe
Bread crumb pasta is one of my favorite pasta recipes EVER, and every time I make this one the Southern husband and I look at each other and say, why don’t we make this delectable pasta recipe more often?
And even better, odds are you have everything you need to make it at the spur of the moment, which is another reason that it is one of those great recipes we love to whip up. Any long strand pasta will do, although I think good old spaghetti works best. Bread for the bread crumbs — any kind you have on hand. Butter. White wine. Fresh parsley. Parmesan cheese and fresh ground pepper.
All stuff I highly recommend having in your kitchen at all times…and if you don’t, I recommend going out to get whatever is missing JUST to make this delicious little dish, which is great on its own or as a side dish for grilled chicken or fish.

Ingredient notes and substitutions
- Pasta: Any long pasta will work for this recipe, but we like spaghetti and linguine the best…they are perfect for holding those bread crumbs.
- Bread Crumbs: Make your own fresh ones by whirling whatever kind of bread you have on hand in your food processor. (I’ve even used a hot dog roll with great success!)
- Herbs: We like both parsley and/or basil for this recipe, but oregano and thyme would also be delicious.
How to make this recipe
STEP 1: Preheat your oven to 350 and line a rimed baking pan with foil.
STEP 2: Make the breadcrumbs by whirling whatever bread you have on hand in the food processor, adding a little butter and white wine, laying the bread crumb mixture all out on a cookie sheet and toasting it in the oven.
Don’t worry if your crumbs are a little mushy before they are toasted, I promise they will cook up to be golden and crispy, and you will have to have a stern talk with yourself about snacking on them before they go in the sauce.
STEP 3: Toast the breadcrumbs for about 10 minutes until they are golden and crispy.
STEP 4: While the bread crumbs are toasting, bring a large pot of salted water to a boil and cook some pasta according to the package directions.
STEP 5: Heat some butter, garlic and a pinch of salt in a small skillet or pan over medium heat until the butter is melted. Pour in some white wine.
STEP 6: Toss together the pasta, the wine sauce, the bread crumbs, some chopped fresh herbs and a handful of Parmesan cheese.
STEP 7: Divide it among plates. Give the whole thing a good grinding of black pepper if you want to. Comfort Food Extraordinaire.
Recipe FAQs
You can use whatever kind of bread you have around – tear it into large pieces and whirl it in your food processor until it has turned into small crumbs.
Any kind of white wine will do…I usually use a chardonnay because that is what we usually have around! 🥂
If you want to add some protein, adding in some cooked seafood (shrimp, flaked salmon) or cooked shredded chicken is wonderful.

Ingredients
- 1 cup fresh bread crumbs (2 slices bread chopped in food processor)
- 1 1/2 tablespoons melted butter
- 2 tablespoons white wine
- 1/4 teaspoon salt
- 4 garlic cloves, peeled and chopped
- 4 tablespoons butter
- 1/2 cup white wine
- 12 ounces spaghetti or linguine
- 1/4 cup chopped parsley
- 1/2 cup grated parmesan cheese
- fresh ground pepper
Instructions
- Preheat oven to 350 and line a cookie sheet with foil.
- Mix bread crumbs, melted butter and 2 tablespoons wine with salt in small bowl and spread in one layer on cookie sheet. (Don’t worry if it’s mushy).
- Bake about 10 minutes or until golden.
- Meanwhile, cook pasta until al dente.
- Meanwhile again, heat butter, garlic and a pinch of salt in small skillet for about 3 minutes until butter is melted and garlic is starting to turn golden. Stir in wine and simmer two minutes.
- Toss together pasta, wine sauce, crumbs, parsley and cheese. Serve immediately.
